#TASTYTHURSDAYS: Baja Shrimp Burrito Bowl

As a child of the gulf coast, seafood has always been a big part of my life. Last week I wanted to put a spin on one of my favorite things, burrito bowls, so I came up with this light, summer-time ready version. 

This week, I'm embarking on a 6 week-vegetarian challenge, so if you're in my current boat, feel free to substitute 1 pound of sweet potatoes, cubed. If you go the sweet potato route you'll roast them in a pan for 1 hour, at 350 degrees, and swap out red onions for yellow onions.


  • 1lb Jumbo Shrimp
  • Cumin
  • Dried Oregano
  • Southwest Chipotle Seasoning Blend (Target Market Pantry)
  • 1 1/2 cups Fresh Cilantro
  • Dry Cilantro
  • Garlic Salt
  • Black Pepper
  • Red Pepper Flakes
  • 2 15.5 oz Cans Black Beans (Drained)
  • 1 14.5 Can Chicken Broth
  • 1 Yellow Onion
  • 1 Green Bell Pepper
  • 5 Garlic Cloves
  • 1 Lemon
  • 2 Limes
  • 3 Cups Uncooked Brown Rice
  • 2 Avocados


1. Combine in a plastic bag:

  • 1/3 cup olive oil
  • 2 tbsp cumin
  • 2 tbsp oregano
  • 2 tbsp southwest chipotle blend (I like Target’s brand!)
  • 2 tbsp fresh cilantro
  • 1 tbsp dry cilantro
  • 1 tbsp garlic salt
  • 1 tbsp fresh ground black pepper
  • 1 tbsp red pepper flakes
  • 1lb jumbo shrimp
  • Juice from half of a lemon

2. Marinate for 2-3 hours

3. Sautee 3-5 mins each side until slightly charred


1. Sauté 2 tablespoons each, Garlic, Green Bell Pepper, and Onion for 5 mins in 3 tbsp of olive oil, sprinkled with garlic salt and black pepper

2. Add Beans and Chicken broth

3. Season to taste with Garlic Salt and Black Pepper

4. Add 1tbsp each, oregano, cumin, onion powder, garlic powder

5. Add 1tbsp Cumin


1. Sauté 2 tablespoons each, Garlic, Green Bell Pepper, and Onion for 5 mins in 3 tbsp of olive oil

2. Add 1 Can sweet corn, drained, continue sautéing until slightly chard

3. Add 1 can Rotel tomatoes, drained, cook for 10 mins

Cilantro Lime Rice

1. Boil 3 Cups Brown Rice in 6 cups of water for 20 mins

2. Add juice from a half of a lemon and 1 lime

3. Boil for 20 more minutes or until water is completely absorbed

4. Add 1/2 cup chopped fresh cilantro

Suggested Assembly:

1. 1 cup Brown rice base

2. 1/4 cup Salsa

3. 1/4 cup beans

4. 6 shrimp

5. Half of an avocado

But you can wild out ;-)

Cash me at SXSW how bout dah?

Exactly a week from today I'll be speaking at SXSW on the panel, Stay Hungry: Increasing Diversity With Food and Hip Hop. Stay Hungry is an innovative culinary competition focused on educating under resourced kids about career opportunities in culinary arts and the ease of cooking, through the lens of hip-hop.

My relationship with Stay Hungry began with a request for an infographic design and has grown since our first collaboration in March 2016. After the infographic I worked on creating the brand's visual identity, setting the brand voice for social media, creating unorthodox collateral materials (think custom sparkling wine bottles instead of thank you cards ;-)), creating the SXSW panel pitch and campaign, and most recently, working on the first product collection that will be housed on Society6. 

I'm really excited to join the talented ladies who are behind Stay Hungry, Syreeta Gates and Elle Simone, along with our amazing moderator Darian Harvin to talk inception, sustaining the brand, and what's next. 

Revisiting the MAKERS Conference.

Earlier this month DigitasLBi streamed the first day of the MAKERS Conference for employees, partners, and guests. The energy in the room was electric, and I left with some key takeaways.

Eva Longoria | For me, Eva normalized being a creative person that was also passionate about pursuing higher learning. When I was debating if I should pursue an M.A., and heard many folks say it wasn’t necessary to have a creative career, she revealed an understanding of how the two complemented each other. It’s been almost two years since I received my M.A. and her talk reminded me of why I pursued it in the first place.

She also schooled the audience on playing the game, whether you like it or not. By the end of her presentation, I was affirmed that the space I’m creating for myself is uniquely perfect for me. It might not be a path many understand or are familiar with, but it’s a path that leaves me enriched and empowered every day, from sunrise to sunset.

Diane von Furstenberg |  Diane instructed me to create a work environment that I could thrive in. As a full-time entrepreneur in a field focused on women, DVF explained that she never felt glass ceilings. After the election was the first time she actually felt sexism. She shared with us a few things that she reflected on, when she found herself in need of strength:

  • The most important relationship in life, is the one you have with yourself. If you have that, any other relationship is a plus, and not a must, and being needy is not attractive.
  • Fear is not an option.
  • Focus on intention. People want to be powerful, and if you focus on your power you get hurt. If you only focus on your energy, you become stagnant. But if you focus on your intention, think about it, polish it, think about it some more. And the power and energy will come.
  • If you doubt your power, you give power to your doubts.
  • Wink at your image, smile at your shadow and enjoy the ride.

Lily Singh | Lily was a face I wasn’t familiar with, but her talk resonated with me in so many ways! Similar to Lily, I came from a family that focused on tradition and structure. So my schemes and antics haven’t always gone over so well with my daddy. I’d say he’s only recently started to get me, lol. Lily reminded me to focus on Plan A, and not to concern myself with Plan B. Your dreams blossom when you go all in on them instead of distracting yourself with fall-back options. In her words “I expect no B’s from you, only A’s, focus on your Plan A.”

Tamika Catchings | Tamika is a true gem. Her talk really honed in on the importance of faith in God and being proud and unashamed to praise Him. Not only am I a born-again Christian, I’ve been a preacher’s kid all of my life and grew up in the South. So essentially I’ve always been immersed in Christianity. When I moved from the South and started interacting with people outside of the Bible Belt, there were a lot of foreign attitudes that I wasn’t familiar with, and I felt pressured to hide my faith. However, Tamika reinforced the idea that I should feel comfortable and free to be transparent about my faith, just as I encourage others to be free and open about their beliefs.

Nourishment for the creative soul.

Lawd, this chicken verde pozole, was AMAZING!! As a creative, it's quite easy to get so immersed in work, that you forget to eat, or eat incredibly poorly. The reality is, poor eating habits can do creatives more harm than good. We're often the last ones to leave the office and the ones who work the longest, through the weekend and back at it on Monday. So we need to stay healthy! Poor eating habits can lead to you getting sick more often, and performing inadequately. With that in mind, I've been approaching food a bit differently. I cook more, and eat out less. It gives me control over what I'm putting into my body, and a way to express my creativity through the amazing medium of cooking :-). It also doesn't hurt that I'm officially 15 lbs lighter since Jan 1st!
